Title: St. James Winery Gourmet Potato Salad

3tbSt. James Country White
  Wine
1/4cOlive Oil
2tbWine Vinegar
1/4tsDried Whole Tarragon
1/4tsSalt
1/4tsWhite Pepper
1tb(To 2)
1/4cGreen Onions -- thinly
  Sliced
1/4cFresh Parsley -- minced
  New Potatoes, (About 1 1/2
  Lbs) -- unpeeled
  Dijon Mustard

Wash potatoes and cook in boiling water until tender. Cut into 1/4-inch slices, add wine and let stand for 10 mins. Combine olive oil and next five ingredients and stir well. Pour over potato mixture. Add green onions and parsley and stir gently. Makes 8 servings.
